Living on the Island - especially in Peel - this dish is inspired by the abundance of beautiful local shellfish that is right on our doorstep! Locally caught Manx King scallops, crab & lobster cooked in a creamy white wine sauce, topped with Manx cheddar and breadcrumbs.
Manx Menu Large Plate: Manx Pork Loin
Ingredients:
• Manx pork loin and Manx potatoes
• Isle of Man creameries butter
• Isle of Man creameries double cream
• Manx smoked bacon
• Garden peas
• Locally made black pudding and chorizo from Tate's butchers in Peel
There are so many delicious choices of meat on the island from our wonderful Manx farmers, we chose pork as our main protein for this dish as we feel it often underrated. Combined together with all the ingredients on this dish really highlights it flavour and adaptability.
Pan seared Manx pork loin served on a bed of creamy mash potato, topped with sliced Manx smoked bacon with pea puree and a black pudding and chorizo butter.
Manx Menu Dessert: RNLI Gin & Lime Posset
Ingredients:
• Isle of Man creameries double cream
• RNLI Fynoderee gin
• Lime juice
• Local berries
• Laxey Glen flour
• Isle of Man creameries butter
• Caster sugar
A beautifully light and creamy dessert made with the Island's finest cream, locally made RNLI Fynoderee gin and a squeeze of lime, topped with whipped Manx cream and local berries. Served with our delicious homemade shortbread on the side.
Manx Menu Takeaway Dish: Filbey Burger

• Manx beef mince, Manx beef chuck, Manx streaky bacon
• Manx cheddar cheese and American cheese
• Ross bakery challah bun
• Lettuce, vine tomatoes, red onions
• Caster sugar
• Red wine vinegar
• Manx honey
• Sriracha sauce
• Manx potatoes
We've always been inspired to make a perfect burger and this one definitely delivers! It's all about the freshness of the local Manx ingredients, our secret blend of herbs and spices in our burger mix and the combination of flavours!
Our homemade Manx beef burger, topped with slow cooked Manx beef and streaky bacon, Manx cheddar and American cheese, served in a Ross Bakery sesame seed bun with lettuce, sliced vine tomatoes, homemade onion chutney and our Manx honey and sriracha sauce. Served with our handcut chips sourced from Peel Fisheries.
