To finish, the omelette is delicately topped with a drizzle of sea salt and chive-infused mayonnaise, using premium sea salt from the Isle of Man Salt Co., enhancing the dish with a fresh, herby finish and a hint of umami.

A rich fusion of Manx ingredients and bold Indian flavours, our Manx Tandoori Pie features tender, tandoori-spiced pulled lamb, slow-cooked to perfection. The filling is encased in a homemade golden shortcrust pastry, made using Gellings eggs from Baldrine, Laxey flour, and rich Manx butter, ensuring a perfectly crisp and buttery texture.
The lamb is sourced from Harrison & Garrett Butchers or Ballakelly Farm, guaranteeing the highest quality, locally reared meat.
