Manx Menu Cocktail: Manx Treacle
Ingredients:
• 25ml Twisted Arm Manx Spiced Rum
• 15ml Foraging Vintners Manx Apple Port-Erin
• 15ml Bramley Apple Juice
• 15ml Manx Honey Syrup
Description:
The Manx Treacle is Kiki Lounge’s homage to the Isle of Man, reimagining the classic Treacle cocktail with a local twist. Our original inspiration was to create a drink using 100% Manx produce; the drink calls for freshly juiced Bramley apples grown on the island, which are currently out of season. To combat this, we created a high-quality acid-adjusted apple juice, carefully balancing the pH with citric acid to replicate the sourness of freshly pressed fruit, the sour note is essential in balancing the sweetness of the Manx honey. Outlier Distilling Company’s Twisted Arm Manx Spiced Rum provides a warming base with cardamom notes that harmonise beautifully with Foraging Vintners’ Manx Apple Port-Erin and the richness of Manx honey syrup. Even when Bradley apples are unavailable, this cocktail remains nearly 80% Manx, celebrating the island’s exceptional ingredients while offering a sustainable, innovative take on a timeless classic.
Kiki Lounge:
Created during the pandemic as a tropical escape from nearly two years of closed borders, Kiki’s is a tropical bar on a not-so-tropical Island. Inspired by the legacy of pioneering American tiki bars like Trader Vic’s and Don the Beachcomber, but with a decidedly millennial flourish, Kiki Lounge is a beloved local haunt offering world class cocktails and warm Manx hospitality.
Owners Jamie Lewis and Drew Fleming (the inaugural winner of the 50 Best The Blend scholarship from The World’s 50 Best Bars) have worked tirelessly to create the ideal tropical hideaway for locals and visitors alike.
In May 2024, Kiki Lounge was awarded 1 PIN Excellent status in the inaugural The Pinnacle Guide listing, recognising its exceptional quality and service. It was subsequently named Bar of the Year 2024 by The Spirits Business and placed in the UK Top 50 Bars 2025, further cementing its reputation as a destination for outstanding cocktails and hospitality. Now in a new site on Douglas’ North Quay, Kiki Lounge is a smugglers’ cove of pop-culture ephemera modelled on the quintessential beach bar, with an ambitious menu marrying tropical tradition with contemporary technique.
