Manx Menu Takeaway Dish: Ain't Chicken, Yessir!
GAIA Coffee and Food To Go is proud to present for the second Manx Menu contest an indulgent, innovative and sustainable Manx creation.
As a plant-based business, when we first started to think about what we could enter this competition with at this time of the year, we have to admit that we found ourselves a bit stuck.
Then, we had the idea to create our own "chicken".
Preparing our own seitan (made from gluten the protein of wheat) we did use a really simple and local ingredient (Laxey Flour) to create "Ain't Chicken, Yessir!".
Inside a Ross Bakery bagel our creation meets a homemade hot sauce, featuring local ingredients such as Fire Island cayenne chilli, Isle of Cider vinegar and Leela's Kitchen spices.
A plant-based yogurt dressing to balance the spicy kick and a selection of baby leaves salad (locally sourced when available).

GAIA Coffee and Food To Go is a new business opened in June 2024 by a former chef, grown up in Italy that 8 years ago decided to call the Isle of Man home.
Our offer varies from handcrafted drinks to breakfast bowls, Ross Bakery bagel and Ciabatta sandwiches available all day with many other options to treat yourself.
Affordability is one of our key values as, we believe that a coffee or a treat should be accessible to everyone. For this reason, we have some of the most competitive prices on Island.
The business sticks to some strong personal values such as Originality, Inclusivity and Sustainability.
We are well known on social media for our transparency and honesty towards customers.
While we still unfortunately offering disposable packaging, we never handed over a single plastic bottle as all of our soft drinks are canned (a more environmentally friendly packaging) we are listed as refilling station on the UNESCO Biosphere app, for water, coffee and food.
